Chewy Coconut Cookies

Ingredients

Preheat oven to 350 degrees F. Combine the flour, baking soda, and salt in one bowl. In another bowl, cream the butter and sugars until smooth, then stir in egg and vanilla. Add the dry mixture in slowly, then mix in coconut flakes. Roll into balls and place on ungreased cookie sheet. Bake for 8-10 minutes.

It is suggested to cool on wire racks. I don’t have wire racks, so I just remove the cookies to a cold pan. Like most cookie recipes, the original instructions read “drop dough by teaspoonfuls…” I roll the dough into balls and they keep a nice round edge when baking. I have made both small and large cookies, and both sizes turned out well. I made several batches one year, got in a hurry near the last few batches and just dumped all the ingredients into one bowl and mixed it up. That last batch was as good as the first. It is hard to mess up this recipe!
